Solved
I have restored one of the template that I suspected was causing the error.
I had trouble incorporating the signature field, it crashed and gave database errors, I will investigate this.

I still have errors, this error is shown when hitting the view and creating the pdf

It looks like you turned on "Dev" PDF Processor. Switch it please to "Stable".
