I recently got e2pdf working on my stage site. I tested it there and it worked great. Now I'd like to set it live. Can I have both a test environment and prod environment with the same license?

Hi.

You can deactivate License Key at Test website and use it at Live website.

If you need to use 2 websites at same time with different domain names you will need to use separate licenses.
