I'm wondering if 1 template is enough. I'm creating a 'meal planner' that members can fill in and submit via Formidable Forms. As it's the same template for everyone is this enough? Or does each submission require a new template?

From your task it seems it will be enough 1 Template. 1 E2Pdf Template can be connected to 1 Formidable Form so all submission to this form can use this 1 template and data inside PDF will be generated depending on submitted data.
