Im trying to change the lable on the PDF if the date that is coming from the filled formidable form is the same as today.

To output today's date inside PDF you must be able to use [e2pdf-format-date]now[/e2pdf-format-date] shortcode which is also available for comparisons inside "Actions" and "Conditions".
